Some of the dice I have encountered have ink that has taken on a brownish tint. Does anyone know what may have caused this? Is there a way to fix them without damaging the dice?

I've not seen that, but I don't usually get used dice.

Could be dirt?

Which races have you seen this on? A few races have had their ink color changed to white from a previous tan/cream color.

Mostly the initial four races and Firewalkers, as well as standard terrains. The nicotine idea seems pretty plausible. It's v not that many dice, so I may just pull them out and put them in a bag. No particularly valuable dice involved, except one Bear Folk

Many years ago I kept my army in an aluminium chain-mail bag I'd made. After a few weeks all the dice were visibly darker from what we assumed was oxidation dust. It just washed right off.

I've seen a few dice where people have tried to reink their dice with different colors. Thats not something that appeals to me. I'm more of a purist.
