With elemental blast, do I have to knock off all the camo or can I just negate 1 of the 3 that was cast on it?

You have negate the entire spell. If it was for 3 health, then you have to negate all 6 points, i.e. spend 9 points to negate it.
Basically, when a multi-health spell is cast, it becomes a spell worth all the points used to cast it.
